The Organic Extra Virgin Olive Oil DOP Terra di Bari is obtained from olives of the Ogliarola, Barese, and Coratina varieties, born and raised in the charming countryside of central Puglia. The olives, harvested by 30 January every year, undergo the oil-making process within two days of their arrival in the oil mill. This is to ensure the freshness of the fruit and to preserve all the organoleptic properties of the olives themselves. The Organic Extra Virgin Olive Oil DOP Terra di Bari has an intense green colour contrasted by yellow reflections, a sweetly fruity aroma, and a flavour that is reminiscent of the scents of freshly picked fruit with bitter and slightly spicy notes. Recommended use and conservation: Its character, flavour, and aroma make the Organic Extra Virgin Olive Oil DOP Terra di Bari a perfect oil for combinations with robust dishes such as roulades, legume soups, and vegetable velouté sauces, or, to best enhance its characteristics, as a condiment for bruschetta, vegetable salads, and the classic taralli.
